Two Ingredient Chocolate Mousse

This was one of my first recipes that inspired me to make desserts with minimal ingredients. Satisfying my dessert cravings without the nasties that left my gut feeling happy and healthy has always been struggle, until I experimented with this recipe. I hope you love this as much as I do!

INGREDIENTS

  1. Coconut cream – Use organic canned coconut cream for this recipe. This is a single-serve recipe so I use half of the canned cream but you can easily scale this recipe. Do not forget to refrigerate the coconut cream for atleast a couple of hours before use to allow the cream to solidify and separate from the water.
  2. Good quality organic chocolate – I prefer to use just dark chocolate but you can use a combination of white and dark chocolate to make it sweeter.

TOPPINGS

If it’s the first time you’re trying this recipe, I recommend using just whipped cream and chocolate shavings / sprinkles to truly enjoy how decadent it is. But if you’re looking to switch this recipe up a little, here’s a few different ways to do so:

  1. Whipped cream – Whisk cold coconut cream till fluffy
  2. Chocolate shavings / sprinkles – Add just a tablespoon to elevate the texture and a bit of crunch
  3. Nuts – Crushed pistachios, peanuts or pecans work really well in this recipe
  4. Berry chia jam – If you’ve got some time, make some homemade berry chia jam and top it over the chilled mousse just before serving. This is one of my favorite toppings because a berry and chocolate combination just hits different!

RECIPE

Ingredients:


250ml coconut cream – chilled

50g dark chocolate – chopped

Instructions:


  1. Add the chocolate over a double boiler along with 100ml of the coconut cream at first. Continue to stir until the chocolate starts to slowly melt – use a whisk if needed. Ensure no lumps remain.
  2. Then add in the rest of the coconut cream and mix until you achieve a thick, ganache-like consistency. Note: if the mixture looks too runny, add in 15-20g more of the chocolate, but ensure that the chocolate melts properly.
  3. Allow the mixture to cool completely before pouring it into your ramekin / baking dish.
  4. Set it in the refrigerator overnight.
  5. Top with come cold, whipped coconut cream and chocolate shavings.
